150g orecchiette pasta
Cook pasta to instructions. Reserve.
Spanner crab, chilli, lemon, watercress
150g raw Fraser Isle Spanner crab meat
4 cloves garlic, finely sliced
1 large red chilli, deseeded, finely chopped
1 lemon, zested rind, juice
½ bunch watercress, washed, picked
4tbs olive oil
Sea salt, to taste
Cracked black pepper, to taste
In a large pan on medium heat, add the olive oil. Add the garlic to the hot pan. Cook until golden brown. Increase the heat to high then add the chilli and crab meat. Cook for 20sec. Add the pasta to the pan and toss through to warm. Add lemon juice, lemon rind and seasoning, to taste, then gently fold through. Top with watercress and serve.
