Not all wines will improve with age. While varieties like gewürztraminer, pinot gris and sauvignon blanc are best enjoyed as young wines, others such as chardonnay, riesling and shiraz age incredibly well. Several factors influence whether a wine should be cellared or not, but the most important is personal preference.
Depending on the variety, both red and white wines can benefit from cellaring.
For whites we recommend chardonnay, riesling and semillon for cellaring, and for reds we suggest cabernet sauvignon, mataro, merlot, nebbiolo, shiraz and tempranillo.
